Saturday we woke up early and had pancakes together, read books & played outside, then took a two hour family nap - ahh lazy weekend afternoons are the best. Later that night Grandma came over to play with D, & we went to a birthday party for my dearest friend Cara. She is in town from Alameda, California, & it has been 11 months since I have seen her! That is the longest we've ever been apart since we met as little girls, so it was no surprise that we both broke into tears when we saw each other.
Today will be stuffed full of full too! It is the feast day of Francis of Assisi, patron saint of animals. Our church's children service will be hosting a blessing of the stuffed animals. We took Chloe last year to the blessing of the pets, & had so much fun! After church Auntie Cara will join us for lunch, & see how much her little friend has grown - I can't wait for her to see him!

If you are looking to whip up some delicious breakfast this morning, I must insist you try a pancake recipe my dear hubby found - it is deeeelish.
Recipe rundown:
Taste: Perfectly sweetened
Texture: Fluffy & crunchy
Ease: Super simple
Appearance: Thick fluffy pancakes with a crunchy outside
Expense: cheap!
Pros: If you are burned out on pancakes, this will do the trick. They keep perfectly in the freezer - wrap them up in saran wrap, then when you want one just pop in in the toaster on defrost.
Cons: They are super filling and you'll eat way too many!!
Would I make this again? Yes! We have them at least once a weekend.
Ingredients
3/4 cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons butter, melted
cooking spray
1.Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".
2. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
3.Whisk egg and butter into "soured" milk.
4.Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
5.Heat a large skillet over medium heat, and coat with cooking spray.
5.Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface.
6.Flip with a spatula, and cook until browned on the other side.
